Cabernet Sauvignon

It is a popular red wine that is now grown all over the world. It is believed to be a cross between Cabernet Franc and Sauvignon Blanc and may have originated in France. It is considered to be relatively adaptable to most soil, with a hardy vine and resistant to common insects and rot disease that usually attack grape vines.

Cabernet Sauvignon is described as a full-bodied wine with high tannin and acidity. The location of where the grapes are grown will influence its flavor. For example, in colder weather the flavor is described as a combination of black currant and green bell pepper. During the aging process it may add a mint and cedar taste. In moderate climates, the black currant flavor may be enhanced with black cherry or black olive flavor. In hot climates, the wine tends to be sweeter with a stewed black currants flavor.

Cabernet Sauvignon pairs well with Chedder, Mozzarella and Brie cheese. Its strong bold taste compliments red fatty meats such as lamb, steak and cream -based sauces. Protein and fat tend to decrease the effects of tannin on the palate.

Tempranillo

This is another popular red wine grapes that makes a full-bodied, ruby red wine. The aroma and flavors of plum, vanilla, herbs and leather. It is often blended with other grape varieties or aged in oak barrels. Since it has low acidity and sugar content it is usually blended with other variety such as Grenache.

The soils of the High Plains and the Hill Country have conditions similar to those of northern Spain where Tempranillo flourish. Tempranillo is considered to be Texas’ signature grapes. Tempranillo pairs well with lamb, beef, stews and chicken dishes.

Petite Sirah

Petite Sirah is described as big, bold and beautiful and makes a big statement on the palate. It is a flavorful, dry red wine. The wine is a rich deep purple, one of the darkest red wines in the world with high acidity and tannin level. The flavors of plum and blueberry mingles with hints of dark chocolate, licorice, mocha and pepper.

This is another variety that is influenced by the terroir. In warm climate, it has a rich blackberry jam flavor, while in cooler climate, it presents with a more earthy, citrus flavor. A bottle of 100% Petite Sirah is difficult to find because it is highly sought after to use in blends. The lucky few that are fortunate to savor a glass of 100% Petite Sirah with its bold flavors accompanied with food are worth celebrating.

It pairs well with beef, lamb, chicken, spicy Asian, Mexican and Italian dishes, as well as Mediterranean flavors. It goes well with vegetable dishes such as mushroom and stuffed peppers as well as soft cheeses such as Brie, Mozzarella and Gouda.

Tannat

Tannat is gaining popularity in Texas for a number of reasons. It is an interesting red wine that expresses it terroir and changes its flavors accordingly. The flavors are described as deep, dark, dry and rustic. It is used in blends as well as varietals. In Texas, it grows well, with thick leaves and tough vines which helps it against some diseases. It buds later in the season, which guards it against late spring frost. It is believed that it contains the highest levels of polyphenols of all red wines.

The flavors of the wine display blackberry, plum, dried spices and the berry quality is fruity and soft. It pairs well with richly marinated meats and vegetables, especially eggplants and mushrooms.
