Tannat is gaining popularity in Texas for a number of reasons. It is an interesting red wine that expresses it terroir and changes its flavors accordingly. The flavors are described as deep, dark, dry and rustic. It is used in blends as well as varietals. In Texas, it grows well, with thick leaves and tough vines which helps it against some diseases. It buds later in the season, which guards it against late spring frost. It is believed that it contains the highest levels of polyphenols of all red wines.
The flavors of the wine display blackberry, plum, dried spices and the berry quality is fruity and soft. It pairs well with richly marinated meats and vegetables, especially eggplants and mushrooms.
